What To Do With All That Kale

“You’re going to have so much kale!”

Last week I spent a lovely afternoon with a friend, and we planted a few seeds and did a few gardening tasks in her yard. One thing we did was started a few (maybe more than a few) kale plants, just to give her some experience with starting seed. And they all sprouted. All of them. They’re cute and tiny now, but in about 3 months, she’s going to have an abundance of healthy, beautiful, delicious kale.

My husband hates kale. At least, he used to. But slowly, over the past 10 years or so, I have found ways to integrate kale into our diet. He even told me last week that he thinks what he didn’t like was store bought kale, but the home grown stuff is ok. Baby  steps. I’ll take it.

Here are some of my favorite ways to use kale, both for my gardening buddy and anyone else who might find yourself on the harvesting end of a little more kale than you anticipated.

6.       Let it get bigger (these plants are biennials, so they will continue to grow for 2 years before making seed. There’s no rush to harvest here)
